One-pan dinners are my favorite! They save time and are easy to clean up.
Enjoy this tasty chicken thigh and veggie dinner.
- 4 Chicken Thighs
- 4 medium purple or red potatoes, peeled and cut into small pieces
- 4 carrots, sliced
- 2 1/2 tbsp olive oil
- 1 1/4 tsp Simply Organic Chicken Seasoning
- 3/4 tsp salt
- 3/4 tsp black pepper
- 1 head of cauliflower or romanesco, cut into large florets
Preheat oven to 400 degrees.
Combine potatoes and carrots onto a large rimmed baking sheet. Drizzle with 1/2 tbsp olive oil and toss to coat.
Brush the skin of the chicken with 1 tbsp of olive oil.
Sprinkle potatoes, carrots and chicken evenly with chicken seasoning, salt and pepper.
Bake for 20 minutes.
Meanwhile, combine cauliflower or romanesco with ½ tbsp of olive oil, and ¼ tsp each of chicken seasoning, salt, and pepper.
Add to baking sheet with chicken and veggies.
Cook an additional 15 minutes until the veggies are cooked through and the chicken is cooked to 165 degrees.
